Sweetlife Chocolate Fudge Brownies

Sweetlife Chocolate Layer Cake



Sweetlife® Cherry Chocolate Layer Cake

Ingredients:
2 large eggs
180g sweetlife Chocolate Bake Mix
4 large egg whites
2 teaspoons baking powder
4 tablespoons (90g) unsalted butter (melted)

Serving Suggestion:
300mls whipping cream
1 tin of black pitted cherries. (Note: Cherries contain fructose)

Method:
Preheat oven to 160°c
Grease two 20cm spring form tins
Beat eggs for 3 minutes until pale.
Add butter, chocolate mix and baking powder and beat together.
Whip whites until stiff.
Fold whites into chocolate mixture.
Spread evenly into tins.
Bake for 25 minutes or until cake tests done in center. Cool.
Sandwich the two layers together with whipped cream and pitted cherries or use any of the following options to decorate.

Option 1: Chocolate Sugar Free Butter Cream
Ingredients:
125g softened unsalted butter
250g cream cheese
180g sweetlife Chocolate Bake Mix

Method:
Beat butter, cream cheese and chocolate mix together in bowl.
Spread on top of cooled cake layers or stack, and frost sides.

Option 2: Chocolate Sugar Free Icing
Purchase an extra packet of Choc Bake Mix to make the Chocolate Sugar Free Icing (click here to view) and use the remaining Choc Bake Mix (135gm) with 450mls of cream to make 6-8 delicious mini mousses (click here to view).
